Hot Cross Bun Bread & Butter Pudding

This super easy recipe has just 3 ingredients and serves 6 – perfect if you’re hosting a family lunch or wanting a sweet treat that isn’t going too indulgent!

INGREDIENTS
  • 2 packs of chocolate chip hot cross buns, 8 buns in total (we used Waitrose they’re 211 cals each)
  • 700g of Sainsbury’s Be Good to Yourself fresh custard (they come in 500g pots)
  • 50g dark chocolate chips

METHOD
  • Preheat oven to 180 degrees fan then warm the custard through in the microwave or on the hob – do not bring it to boiling just warm it through so it’s more running in consistency
  • Cut the hot cross buns into strips and pour a little of the warm custard in the bottom of a deep dish. Then layer the hot cross bun strips on top, repeat the custard then bun layer until it’s all used up (like a lasagne). You want the top to be a custard layer.
  • Sprinkle the choc chips on top (this is optional but very good) and pop in the oven for 20 minutes. When you remove it let it cool for 10 minutes then serve. It’s delicious the next day cold too, and will last covered in the fridge for a good 3 days.
